Grignard attack of carbon dioxide
A Grignard reagent can attack carbon dioxide to make a carboxylate, which upon protonation, forms a carboxylic acid. This is a simple, sleek way to make carboxylic acids. The negative carbon of the Grignard attacks the partially positive charge of the carbon atom of carbon dioxide. The pi electrons go onto oxygen, making the carboxylate.
